The menu is structured like a novel, beginning with a captivating Prologue. Rosemary sourdough with whipped pumpkin seed butter or deep-fried veggie bites, a garden version of British bubble and squeak, are a delightful opening.
Chapter I is centered on a theme of harvested ingredients. Leeks are a national symbol in Wales, and there has never been a leek story like this one: a Homestead Farm leek served with twice-baked Lancashire bomb cheese soufflé, rarebit sauce, and fresh black truffle. An oven-baked globe artichoke is given a sweet note with an apple and a honey reduction.
Onto to Chapter II, aptly titled Hooked, for seafood. A savory, pan-seared Orkney scallop is a delight to the palate, while a pan-fried Cornish John Dory is a crispy wonder that melts in the mouth. For Chapter III, dubbed Farmed, the tenderness of a pork cheek is offset by spiced red wine and broccoli puree, while a port wine jus and creamy celeriac puree enhance the flavors of a duck entree.
